Roasted Tomato Basil Soup | Low-Fat Stovetop Soup Recipe

It's soup Sunday at my apartment, and this week I am made a low-fat roasted tomato basil soup! It was as easy as it was flavorful, so I wanted to share everything with you all here.

Ingredients for Roasted Tomato Basil Soup:

  • 4 to 6 Tomatoes (I used two large beefsteak and two roma tomatoes)

  • Pepper & Salt

  • 1 tbsp unsalted butter

  • 1 yellow onion

  • 5 garlic cloves

  • 3 sprigs fresh thyme

  • 1/4 cup tomato paste

  • 6 fresh basil leaves

  • 2 cups vegetable stock

  • 4/4 cup skim milk


Steps to Make Roasted Tomato Basil Soup:

  1. Roughly cut up tomatoes, drizzle with oil and top with some salt and pepper. Roast for 40 minutes at 375F.

  2. While tomatoes are roasting, chop your onion, mince your garlic, chop thyme and basil.

  3. Heat a little butter on the stove and saute the onion for a few minutes until lightly golden.

  4. Add in garlic, thyme, and tomato paste. Stir and sprinkle with a little salt and pepper.

  5. Add in roasted tomatoes and chopped basil. Let simmer for 5 minutes.

  6. Add in vegetable stock. Simmer for 15 minutes, stirring as needed.

  7. Remove from heat, and use an immersion blender to mix it all up!

  8. Add in your skim milk, and enjoy!

All in, it takes about an hour and 15 minutes to make, but you only need to be actively cooking for about 20 minutes.
