Pumpkin Pie Truffle Balls | No Bake Dessert

Pumpkin season is in full swing, and I love a pumpkin pie inspired dessert. Especially one that requires no baking and can be stored in the freezer to enjoy anytime.


Today's pumpkin recipe is pumpkin pie truffle balls. They do not have any added sugar beyond what's in the ingredients, so you can eat as many of these pumpkin treats as you want. Who are we kidding? You could do that anyway.

Ingredients for Pumpkin Truffle Balls:

  • 2/3 cup crushed graham crackers

  • 1/3 cup pure pumpkin

  • 1/4 cup light cream cheese

  • 1/4 tsp pumpkin spice

  • White chocolate

Directions:

  1. Gather the ingredients and crush your graham crackers. I found that about half a sleeve of standard graham crackers came to 2/3 cup when crushed. I would recommend using a food processor to crush them, but you can also just put them in a plastic bag and smash it.

  2. Mix together the graham crackers, pure pumpkin, light cream cheese, and pumpkin spice. Chill for ~10 minutes in the fridge.

  3. Roll mixture into eight to ten balls. Let chill in fridge for ~10 minutes.

  4. Melt your white chocolate and drip the tops of each truffle. I found that about 1/3 of a standard white chocolate chip bag was plenty for me, but feel free to melt more and do thicker coats.

  5. Add toppings! This is your treat, so customize it how you please. I sprinkled pumpkin pie spice and leftover crushed graham cracker on mine, but you could also add pecans, granola, or something else entirely.

  6. Store in the fridge or freezer and enjoy! I tend to store in the freezer so that they taste like little pumpkin pie ice cream bites.
