Pumpkin Mac & Cheese Recipe
It's officially October which means pumpkins are everywhere you look. Today's post is about a festive fall twist on the classic comfort food - pumpkin mac and cheese.

This dish is the perfect side for your fall festivities. Whether its a group Friendsgiving or a solo-halloween movie marathon. The best part? You can make it in under a half hour.
Ingredients for Pumpkin Mac and Cheese:
1 box pasta (I use bowties)
1 cup light cream (substitute for skim milk to make it even healthier)
1 1/2 cups shredded cheddar
1/4 cup ricotta
1 can pure pumpkin
Pepper
Roasted red pepper flakes
How to Make Pumpkin Mac and Cheese in under 30 minutes:
Boil water and add pasta - you should cook until al dente (usually ~5 minutes). The pasta will keep cooking when added to the sauce, so make sure not to overcook it.
In a pan over medium heat - add light cream, shredded cheese, ricotta, and pure pumpkin. Stir it all together until evenly combined.
Add some pepper and red pepper flakes to your preference.
Add your drained pasta into the pan (still over medium heat) and mix it all together.
Plate and enjoy!
